PORK ROAST WITH GRÜNEN KLÖSSEN (dumplings made of raw potatoes)
Ingredients:
1 - 1.2 kg of pork roast
Salt, pepper, paprika as you like, caraway
1-2 onions, as you like garlic
Soup vegetables
Some fat for frying
Vegetable broth
Some flour or gravy thickener
FRIWEIKA dough for „Grüne Klöße“ (dumplings made of raw potatoes)
Roasted bun dices
Side dishes of your choice
Preparation:
Cut the onions and the soup vegetables into coarse pieces. Fry the roast with the spices in hot fat, add the vegetables and the onions upon turning and fry briefly. As soon as the meat becomes golden brown, add 200 ml of vegetable broth and put into the preheated oven (220° C) . Add further broth or water, turn the roast once and continue preparation for another hour at 200° C. Then keep the meat warm, put the sauce through a screen or puree with the vegetables. Thicken afterwards and spice.
During that portion the dumpling dough, put the bread dices into the middle, form dumplings and put them into boiling salt water. Allow to steep for approx. 20 minutes without lid. Take them out and serve with the roast!
