RUSTIC DUMPLING DOUGH CUPCAKE (gluten free)
Ingredients:
FRIWEIKA-dough for „Grüne Klöße“
(dumplings made of raw potatoes) 750 g
3 eggs
200 ml of cream
150-200 g of coarse Mettwurst (sausage with spiced minced meat)
Pepper
Grated nutmeg as you like
Preparation:
Separate 3 eggs; beat egg whites until whipped well; cut 150-200 g of coarse Mettwurst into dices; mix yolk with dumpling dough, Mettwurst and 200 g of cream; fold in beaten egg whites and spice (pepper; nutmeg); grease well the cups (use e.g. muffin cups without paper insert) and bake for approx. 50-60 minutes at 180 ° C in a fan oven or, as a crispy alternative, flatten on a baking sheet (apply baking paper or grease well) and bake for 50 minutes at 180 ° C. Serve with herbed yoghurt dip and salad!
